Chairi Puri (Kachori)
Ingredients:
1 Cup (heaped) Flour
1 tsp. Coarse black pepper
1 tsp. Shahi jeera/jeera
1 tsp. Pomegranate seeds (dharoon khatta)
½ tsp khus khus
1 tsp oil
½ tsp Salt
oil for fying.
Method:
Sieve the flour, add the slt, pepper, shahi
jeera/jeeri, pomegranate seeds, khus khus,
oil & knead into a dough with enough water
for about 15-20 minutes. Leave covered for
about 3- minutes. Divide the dough into 20
equal portions, using a little oil, roll out
each portion into puris 4” in diameter.
Heat the oil for frying to a smoking point
& fry each rolled puri till well-puffed
& golden brown. Drain & sere W/’Khati
Mithi chutnee’.
Variation:
You can add ¼ cup of spinach puree
to the dough instead of water & contiunue.
You can also add ½ cup of grounded
past of boiled peas to the flour/dough to
make puris.
