Khatti Mithi Chutney

Ingredients:
1 kg green Mangoes (peeled and sliced lengthwise)
1 ½ Kg Sugar
¼ Cup vinegar
¼ Cup red chilli powser
1 pint water
20 black pepper (whole)
20 flakes garlic (peeled)
20 almonds
1 tsp ‘saunf’
1 tsp nigella (basar jo beef) black seeds, similar to onion seeds
1 tsp citric acid

Method:
Boil the sugar & water to a one thread consistency. Add the citric acid. Remove the white clouds collected at the surface. Add the sliced mangoes & allow to simmer till the syrup thickens & the mangoes are softened. Now add the garlic, almonds, whole black peper, saunf, nigella, chilli powder, vinegar & salt to taste, cover & simmer for 20-30 minutes. Remove from heat & leave it covered, if you need a thicker syrup, you can boil it once again.

Store in a clean jar & use as required. The chutney lasts for quite a long time as the citric acid acts as a preservative.
