Method:
After soaking the dal for about 2 hours ,
put it in a thick vessel and add salt, water
and turmeric powder. Cook on a slow flame
till the dal is tender and water has dried
up. While cooking, remember to stir the dal
2-3 times. When the dal is ready, sprinkle
red chilli powder and mango powder and mix
well. Let it cool completely. Adding salt
and sufficient water, make a dough of the
wheat flour, as you would for chapatis. Divide
into equal portions. Take each portion, roll
out a little, apply a little ghee on it, fill
a little stuffing of dal and fold and roll
again like a chapatti, but slightly thicker.
Heaat the tava, rub a little ghee , fry the
Lola applying one teaspoon of ghee while turning
sides, on a medium flame, till done. The accompaniment
for this is generally Boondi Raita.
