Sanha
Pakora
Ingredients:
1 cup heaped besan (gram flour)
2 med. Size onion chopped very fine
4 green chillies chopped very fine
2 pc giner chopped very fine.
1 small bunch coriander leaves
1 bunch mint
1 Tsp. of each chilli powder, jeera, whole
dhania, Pomegranate seeds (Anardana) a pinch
of cooking soda (or bating powder) or 1 tbsp.
Oil
Oil for deep frying.
Sieve the besan, add onion, green chillies,
ginger, coriander, salt.
Method:
Leaves, mint, jeera, dhania, Anardana, baking
soda/oil mix all these ingredients and make
a butter by adding about ¾ cup of water
till it becomes thick.
Heat oil to
a smoking point take 1 tbsp of themixture
and drop into the hot oil, frying few at a
time. Medium heat, turn frequently till light
brown. Remove from the pan and fry another
lot. When cool cut the Pakoras into two and
fry again till goldenbrown and crisp, serve
hot with green chutney.
Variation:
Veg. Pakoras can be made same as above by
adding finely chopped vegetables.
