Dal-Jo—Phulko
(Dal Parathas)
Ingredients:
4 cups wheat flour
1½ cup moong dal (soaked for 2 hours)
2-3 green chillies, finely chopped
1 small bunch corriander leaves
1 tsp pomegranate seeds/daarun khatta,crushed
1” piece of ginger
½ tsp haldi powder
1 tsp dhania powder
1 tsp chillie powder
1 tsp amchur powder
4 tsps oil
Salt to taste
Method:
Knead the wheat flour into a smooth dough
with oil & a bit of salt. Set aside.
Boil 1 cup of water, add a
tsp of oil, & haldi powder, add the soaked
dal, cover & cook for just 5 minutes.
Remove from heat & strain. Add the dry
masalas, green chillies, ginger, corriander
leaves & salt. Mix well.
Form medium-sized balls of
the dough, flatten a bit & stuff it w/2
tsps of the dal mixture. Roll out into ¼”
thickness & roast on a ‘tawa’
over low heat. Fill crisp by adding a little
pure ghee or oil a little by little.
Serve hot w/yogurt & pickles.
