(Sweet Rice) Serves:5 Cooking time: 30-40 mins

Ingredients
250 gms
basmati rice (preferably)
150 gms
sugar
8
green cardamoms(powdered)
1 tsp
Orange colouring
8-10
Cashewnuts
8-10
almonds
2 tsp
ghee
Approx 20 strands
(varak)
sufficient
water for cooking the rice

Method:

1) Wash and soak the rice in sufficient water for 20 minutes.
2) Par boil the rice and then drain out the water completely.
3) Dissolve the saffron strands in 1 tablespoon of water and add it
to the rice along with the sugar, orange colour and powdered cardamoms.
4) Mix well. Cook on a low fire for around 5-7 minutes.
5) Then keep the vessel on a preheated tava and let simmer for 5
minutes.
6) Heat the ghee and add it to the rice.
7) Garnish with chopped cashewnuts and almonds. Decorate with
varak (beaten silver).

You can serve it with the great combination of Sai bhaji and fried potatoes.
